Let me first say, I am not (and will never claim to be) a good cook. I don’t even find enjoyment in cooking… like at all….yup I said it! So, recipes will not be a focus of North Houston Moms, BUT I am making an exception today because Banana Bread is one of those recipes that’s just too easy. I almost always have all the ingredients in my house on any given day, it can be eaten for breakfast or lunch all week long, it’s easy to pack in school lunches, you can add peanut butter on it to make it “healthier”, my kids can help me make it, and it prevents me from wasting the almost rotted bananas on my counter….. that’s a mom win if you ask me. Disclosure: this recipe was given to me by my own mom, so hopefully it wasn’t stolen from someone else, but I can’t guarantee it…… ENJOY!
Ingredients:
3 or 4 Ripe Bananas
1 Cup Sugar
1 1/2 Cup Flour
1/4 Cup Melted Butter
1 tsp. Baking Soda
1 tsp. Salt
1 egg
Optional: 1/2 cup pecans, nuts, or raisins
Instructions: Preheat oven to 325. Grease loaf pan. Mix ingredients all together and bake for 1 hour.
